Mint Jelly

I planted a little sprig of mint last year and I wish you could see it now. After harvesting and drying as much as I want, there will be lots left so I am looking for ways and recipes to use mint. I found a great mint jelly recipe the other day but would love to hear from some of you. What are your favorite ways to use mint?

Mint jelly sounds interesting! I don't think I have ever had mint jelly before. I hope you share the recipe that you found. I use mint for some of my beverage recipes such as my lemon iced tea.

I will share the recipe Cassia. I actually found it on cooks.com and it sounds very simple to make. I plan to harvest my mint sometime this week and make at least one run of jelly.
