skinny potato salad

I never would have thought about this but now that I have read it over in a little book I picked up I am pretty sure I am going to try it this weekend for a barbeque that we are having. Does anyone have a similar recipe?

2 pounds of cooled and chopped red potatoes (we love red ones in our house)
5 hard boiled eggs (love these too)
3/4 cup of 2% Greek yogurt (plain but I never get 2%)
3 celery stalks (chopped)
1/2 red onion (diced)
1 tablespoon of Dijon mustard
1 tablespoon of apple cider (they say you can use white vinegar too but I hate the stuff)
1 cup of chopped herbs (dill or parsley)
salt & pepper

My recipe is pretty similar to yours, but I wonder why I haven't thought of using Greek yogurt? :rolleyes: I will surely skip the mayonnaise and use Greek yogurt instead the next time I make potato salad.

Yogurt? Wow! No, I don't have any recipes that call for yogurt instead of mayo or salad dressing. I don't know if I would like this. I wonder if the cider vinegar gives it a sweet taste? I've never had Greek yogurt before.

Many "skinny" recipes substitute yogurt for mayo. I have a great salad dressing recipe that uses Greek yogurt. I've never heard of it in potato salad before. Chabella, please let us know how this tastes. It sounds like a good recipe.
