Relatives are coming for dinner this weekend and I am preparing baked spaghetti. Does anyone know how much fresh oregano to put in the sauce? I have it growing just outside my front door and it smells wonderful. I don't want to get too much or too little. Help!
I've never used oregano fresh, so I'm not positive, but most of the time I find that I need to use about 3 times as much fresh herbs versus dried. I would start out small and then just taste test until you get it to where you like the flavor.
I would suggest the 'taste test' also. It's always better to go lighter on the spices, I think. Not everyone likes a lot of spice so just keep some extra handy for those who may want to add more.
Fresh will have a stronger flavor so I would also recommend tasting as you add it. If you start off with just a little, you can always add more. It will also get stronger the longer you simmer your sauce so you may want to wait for a little while before adding more.
